this weekend was pretty much photo-less. we started off with what we thought would be a quiet and relaxing weekend, but somehow ended up with an exhausting weekend that was jam packed. the only weekend event that ended up getting photographed was breakfast. breakfast consisting of pumpkin spice pancakes, to be exact.
pancakes are always a favorite weekend morning breakfast, but they are extra special when they contain pureed pumpkin along with all of the spices that make your kitchen smell like fall. these pumpkin spice pancakes are the perfect way to start a weekend morning in autumn when the air is crisp and you're still wearing your pajamas.
you'll really step it up a notch if you cover these pancakes in warm maple syrup. that was ryan's idea. warm maple syrup . . . the man's brilliant, i'm telling you.
pumpkin spice pancakes
prep time: 5 minutes
cooking time: 10-15 minutes
yields: 12 pancakes
adapted from joy the baker
ingredients:
1 1/4 cups all-purpose flour
2 tablespoons granulated white sugar
2 teaspoons baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/4 teaspoon ground ginger
1/4 teaspoon ground allspice
1/2 cup pureed pumpkin
1 cup milk
1 large egg
1/2 teaspoon pure vanilla extract
2 tablespoons melted butter
directions:
whisk together the flour, sugar, baking powder, spices, pumpkin, milk, egg, and vanilla. stir the melted butter into the batter. heat a lightly buttered griddle or frying pan on medium heat. for medium-sized pancakes, pour 2-3 tablespoons of batter onto the griddle. flip the pancakes when they start to bubble. cook until each side is golden brown and they are cooked throughout. serve hot with warm maple syrup.

I tried a pumpkin ricotta pancake recipe on dad the other day. They were very heavy and I would not make them again. I thought I would try that recipe because my favorite pancake is the Lemon Ricotta pancake recipe. But it did not work with the pumpkin.
I will try your recipe since it is the season for pumpkin and spice.
