we are pretty fond of pancakes at our house. we usually have them for breakfast at least once per weekend.
it's summer and it's sweet corn season. that sounds like a pretty good excuse to put sweet summer corn into as many recipes as we possibly can.
so, sweet summer corn in pancakes? sure, why not!
recently, we made these sweet summer corn pancakes. they tasted just like summer.
even though i was terrified that i was going to accidentally make popcorn in the process, i charred the corn over the gas burner for several minutes.

these pancakes were absolutely delicious. they reminded me a lot of corn fritters.
the charred sweet summer corn added so much flavor to the pancakes.
these pancakes are going to be one of our favorites this summer for sure!
sweet summer corn pancakes
prep time: 10-15 minutes
cooking time: 10-15 minutes
yields: 10 medium pancakes
adapted from joy the baker
ingredients:
1 ear sweet corn
1 cup all-purpose flour
2 teaspoons baking powder
1/4 cup cornmeal
2 tablespoons granulated sugar
1 cup buttermilk (or milk)
1 large egg
1 teaspoon pure vanilla extract
directions:
remove the husk from the ear of corn and char the corn by toasting it directly over a low gas flame. rotate the corn until each side is lightly charred. remove from the flame and allow the corn to cool. once cool, cut the corn from the ear and set aside.
in a medium bowl sift together the flour and baking powder. add the cornmeal and sugar. in a separate bowl, whisk together the milk, egg, and vanilla. add the wet ingredients to the dry ingredients and mix until combined. stir in the charred corn kernels.
heat a lightly buttered griddle or frying pan on medium heat. pour 3 tablespoons of batter onto the griddle for medium-sized pancakes. flip the pancakes when they start to bubble. cook until each side is golden brown and the pancakes are cooked throughout. serve hot with maple syrup.

That reminds me of when my mom would make corn fritters. I use to love them, but never quite got the hang of her recipe.
