quarantine cooking: huevos rancheros

we got hungry for huevos rancheros recently.  we had all of the ingredients and made them for dinner on the back screen porch.  i'm not sure why i don't think of making them more often, they're so easy and yummy!

breaking free from quarantine for a little ice cream date

after all of that yard work, we thought we deserved a little treat.  so, we broke free from quarantine to run out to one of our favorite local ice cream shops for a treat that we shared in the car.  it was a fun little weeknight date!

quarantine yard work

being home is the perfect time to get our yard ready for the summer.  the weather has been so lovely lately, and we have enjoyed spending time outside in our yard.  i love seeing the yard in bloom . . .

^we have both purple and yellow irises in our back yard.  the purple always bloom first.^

^we're also working on growing some sunflowers from seeds.  we honestly didn't think they would do anything because the packets of seeds are so many years old!  they are happily growing on the back screen porch for now.^

memorial day 2020 (quarantine edition)

we were so happy to be able to see our parents yesterday for memorial day!  everyone came up to our house for a picnic on the screen porch.  we had burgers, corn on the cob, tortellini salad, potato salad, deviled eggs, homemade pickles, and watermelon for lunch.  for dessert we had rice pudding and patriotic red, white, and blue vanilla-almond cupcakes.

after lunch, we stretched our legs by taking a little walk.  (we were all sweating by the end of the walk!)  even though it was very hot outside, it was such a nice day!

some free time on sunday morning meant homemade crepes filled with fresh strawberries.  it has been so, so long since we've had crepes or fresh strawberries!  we enjoyed them with a side of veggie sausage.

the other day we made our dinner mini . . . individual baked ziti in mini cast-iron skillets and individual chocolate peanut butter pies in mini ramekins.  yum!

we're not the only ones who have been enjoying all of the free concerts that have been streaming during this quarantine.  leko loves it when we sit on the couch to watch something because that means he gets to come up on our laps for a good nap.

quarantine cooking: vegetarian sloppy joes

we've made a lot of yummy recipes during quarantine.  recently we made my mom's sloppy joe recipe vegetarian and it was so good.  it was extra enjoyable with homemade chips out on the back screen porch!

this guy keeps a good watch over his kingdom all the time, but especially now during quarantine.  he is always on alert looking out the front window to see what is happening on his street.  so cute!

mother's day 2020 (quarantine edition)

mother's day was different than usual this year due to the quarantine, but we were still able to see our mamas (from a safe distance, of course) which was so nice.

we made some mother's day treats for our mamas (mini lime pies, cara cara orange poppy seed muffins, and baked chocolate doughnuts with pink cream cheese glaze), loaded them up in the car, and then drove to their houses to deliver them.  it was nice to get to see our parents for a short time.  we can't wait to celebrate like "normal" soon!

leko's present to me on mother's day was extra cuddles and snuggles which was exactly what i wanted for my fur-mama's day gift!  what a lover!

happy mother's day today to our amazing mamas!  looking at this picture of us with our mamas in a pool on a cruise ship really makes me want to jump right back in that pool!

we're both so grateful for such amazing mamas that we get to call ours (even if we can't see them like we would like to because of this quarantine)!

quarantine may flowers

they say april showers bring may flowers.  we certainly had a lot of showers during the month of april, so we were extremely happy to find one lonely tulip blooming in our front yard now that it's may!

a cinco de mayo fiesta for two in quarantine

cinco de mayo fell on tuesday this year which was extra exciting since tuesdays are for tacos ("taco tuesdays!").  we made a little cinco de mayo fiesta for dinner for two quarantine style on our back screen porch.  it was so yummy! 

we had tacos with all the fixings: vegetarian beef, tomatoes, lettuce, onions, cheddar cheese, sour cream, salsa, and guac!  we also had mexican street corn as a side and virgin margaritas!  it was all so good and it was a fun little date!

a socially distant walk around the park to break free from quarantine

one of our local parks finally opened back up on monday after being closed for several weeks.  after work, we meet up with ryan's parents for a socially distant walk from one another around the park.  unfortunately, it decided to rain once we got there, but we walked nonetheless.  it was nice to get outside despite the cool temperatures and the rain drops.

after we came back from our bike ride on sunday, i looked out into the hallway and saw these two passed out on the hallway floor.  i guess all the nice sunshine on sunday and a 14 mile bike ride wore them out!

an escape from quarantine

the weather on sunday was absolutely glorious!  we escaped from quarantine and went for a bike ride on a trail that we haven't been on in a few years.  the sun was shining, it was warm, and there weren't too many people on the trail.  it was such a nice escape!

we never see turtles on the bike trails!  wonder where this little guy was going!
